He began his career in public service as a Deputy Attorney General with the California Department of Justice during the 2010s. Schultz then transitioned to local politics, serving on the Burbank City Council, where he was elected in 2020. He subsequently became Mayor of Burbank in 2023. In 2024, Schultz was elected to the California State Assembly, representing the 44th District, and was appointed Chair of the Assembly Public Safety Committee.
